I'm someone who's undergone a complete life/self overhaul. I'm now a professional in my dream job, balancing an amazing relationship, a healthy body, a healthy self image, my passions, my family and surrounding myself with good people. Laksa – Indonesian curry soup

 

Traditional Indonesian dish – curry soup & noodles with basil, lime, pandan leaves, coconut milk and fried dried onions.

1 packet Laksa Bumbu (power spices)

1 bushel thai basil

1 lime

1 can coconut milk

2 tblsp raw sugar or palm sugar

1/2 lb chickenm(diced into 1″ cubes)

5 tblsp dried onions

2 eggs, hard boiled and sliced

2 packets udon noodles cooked and strained

 

Fry the seasoning lightly in oil until slightly brown

Cook chicken in spices

add coconut milk and 1/2 can water

add sugar

bring to light boil and add lime, cooking for about 5-10 min

 

in separate bowl fry dried onions in coconut oil (or any lightly flavored oil)

 

place noodles in serving bowl, pour sauce, sprinkle onions and basil topping with sliced egg

 

enjoy!
