Me, today. 6.7.12. Healthy, Easy, Delicious Party Dishes

Today was a pretty normal day, work and workout, but as I looked at a potluck filled weekend schedule, I thought man, I bet there’s no one is going to bring anything healthy…. Between the buffalo wings, jalapeño poppers and supermarket tray of cookies, there’s rarely anything healthy to eat. So I’m deciding to exercise my creative no cooking brain and get creative to stay healthy!

Nonono, don’t go for the same ole veggie tray that you picked up last minute as you were running late – make something good. You know you love being the girl that brought that awesome finger food, well here’s an idea to do that and stay healthy!

Try some of these colorful and healthy snacks!

– Watermelon squares with some feta cheese and fresh basil on top

– Bright and long veggie strips with vinegar based dips instead of cream

– Or how about a caprice salad? toss mini mozzarella balls in with cherry tomatoes, fresh basil and balsamic and you’ve got a bright, tasty potluck presentation that will have everyone talkin.

– Different colored grapes on mini skewers next to a light cool whip dip

– Bring slices of pineapple on a skewer and grill them then lightly dust with cinnamon – mmm mm! warm, sweet and easy!

– slice apples so they’re round and put a little unsweetened peanut butter and unsweetened jelly for carb free mini PB&J’s – it’ll still taste sweet from the jelly and apple

– Bring a big bottle of sparkling water with some mashed strawberries and lemon slices and mint thrown in – a sweet, refreshing and healthy alternative to soda!

– Brew some sun ice tea with some over ripe blackberry, strawberry and oranges instead of adding sweetener.

– Half some figs and throw them flat side down on a pan, sprinkle lightly with parmesan, stick a tooth pick in and it’s suddenly an hordeurve

Get creative and think outside the box. Being healthy isn’t hard, it just takes thought.
